Cheeeesy stuff

Hi lovely reader,

The last couple of days the weather has been lovely and I find I am more inclined to eat delicious and healthy salads when that happens. But if I do make a salad I love to add some kind of cheese. Blue cheese is a favorite but since not everyone loves blue cheese as much as I do, variation is key. Feta is another cheese love, but rest assured; you can swap most of the cheese used in any of the recipes for whatever your favorite is.

For this newsletter I've selected a couple of my favorite cheesy salads for you. Perfect for summer, for your next barbecue or just because you feel like eating one.

About Simone

Hi there! My name is Simone and I am the owner of In Simone's Kitchen. I love showing you how easy it is to create delicious and healthy recipes for daily use (but loving a good cake too!)

Pasta and blue cheese. Aren't those two just meant to be together? In this delicious and summery version of a pasta salad I've combined juicy tomatoes with loads of blue cheese and basil.

Feta cheese and watermelon

Another summery favorite is this easy and delicious salad with watermelon and feta.

Spelt salad with feta and pumpkin

Nutty spelt with creamy feta and sweet pumpkin. What's not to love right?

Quinoa salad with feta

Of course feel free to change the feta for blue cheese or any other cheese you like and love!

Pointed cabbage

Are you a pumpkin fan or not so much? Hi Reader, I can still remember the time when pumpkin wasn't all that big of a deal here in the Netherlands. Sure you could find a stray butternut squash here and there but more than a pumpkin soup wasn't really made. O boy how that changed! And I'm glad it did too, because I love pumpkin! And while you can find pumpkin all year round, there is no better pumpkin season than autumn! So to give you a head start I've collected 15 of my favorite pumpkin...

Affogato

A fancy word for ice coffee Hi Reader, It suddenly popped up everywhere. At least here (in the Netherlands) you can now find affogato almost in every single restaurant or café, while up until recently no one had ever heard of this Italian ice coffee. And while I am not one to follow all the food hypes, I couldn't resist making this insanely delicious ice coffee. So you can try it too! And trust me it is the easiest ever. With just two ingredients! Affogato How good does this look right?...

Do more with popsicles! Hi Reader, Over here it seems that summer has finally started. It took long enough with endless amounts of rain, but now that june is almost over, it seems the good weather has finally arrived. And whenever the sun shines I feel the need to make popsicles. Not only are they the easiest ice cream out there but they're also pretty healthy. Depending on what you put it them of course, but with a bit of yogurt and fresh fruits, you can't really go wrong!
